Bodega La Araucaria arises as a continuation of the previous/old Bodega Montijo, from the middle of the last century, with a new direction, purpose, goal and philosophy.
Regarding our philosophy: maximum respect for the environment, treating crops in the most ecological way possible and with natural products such as: sulfur, bentonite, horsetail, diatoms, cinnamon, ... etc., and without the use of herbicides or other chemicals.
Regarding crops and land: given the orography and origin of our islands, the cultivation plots are small terraces open to the sea and impossible to mechanize. Located in the Valley of La Orotava, north face of the island, at altitudes between 400 and 800 meters above sea level.
The tropical climate influenced by the Trade Winds coming from the North Atlantic brings freshness and humidity to the open slopes to the North of the island, creating a great difference between them and those exposed to the South.
The vineyards, generally over a hundred years old and with a density of about 1,000 plants/Ha., are planted on clayey-stony soils of volcanic origin.
The “Cordón Trenzado de La Orotava” driving system has its origin in the need of our ancestors to take advantage of the land for other subsistence crops (cereals, potatoes, vegetables,...), parallel to that of the vine.
The work in the crops must be done manually. During the manual and selective harvest, we cut the bunches that have reached the appropriate parameters to make the type of wine that is intended.
As part of our philosophy, "greater care in the field and less intervention in the cellar", we try to have a minimal influence during the winemaking process: for this reason we carefully select which bunches are cut so that later in the cellar we have an optimal fermentation without input of cultivated or foreign yeasts and with a minimum contribution of sulphites.
